NEW YEAR'S EVE 2027 AT FAIRMONT RIO
On the 6th floor of Fairmont Rio, the evening comes with a privileged view of Copacabana’s spectacular fireworks display.
The celebration begins at 7:30 PM, featuring a five-course dinner with beverages included, live music, and a DJ to welcome 2027.

A menu sequence created especially for New Year's Eve, featuring fresh ingredients and different moments at the table.
COUVERT | 7:30 PM
Mix of nuts and dried fruits, méli-mélo of stuffed and marinated olives, Josper-smoked carrot hummus, sesame puff pastry toasts, truffle potato chips, focaccia with sea salt and rosemary, and mini black olive baguette.
STARTER | 8:30 PM
Mini burrata with tomato textures, tomato tartare, tomato chutney, cherry tomatoes, black olive powder, arugula microgreens, and pine nut pesto.
1ST COURSE | 9:15 PM
Cod slow-cooked in smoked olive oil, with green velouté, green peas, edamame, asparagus, and guanciale pangrattato.
2ND COURSE | 9:45 PM
Josper-grilled Angus beef tenderloin with morel mushroom jus, fondant potato confited in duck fat, and baby vegetables sautéed in brown butter.
DESSERT | 10:30 PM
The cocoa fruit in all its sweetness.
Alcoholic beverages and soft drinks included.

After the fireworks, the party continues with an after-party featuring a DJ on the 4th floor of the hotel, from 1 a.m. to 5 a.m.
